Enjoy Soup for the Season...Yum!



Ever think about how delicious soup tastes, especially when the weather starts to get cold and that north wind blows?

Soup is not only a warm comfort food. It offers so much more!


I call it a "flexible food"! It's flexible because it's easy to make. On those days or nights, when you don't want a big production, you can put it together quickly.


Soup offers variety. You can make it with leftovers, low fat, dairy free, with meat or fish, all veggie, or with a cream base.


To me, the best part of soup is that its a nutritious comfort food. There's nothing like a warm bowl of soup on a cold and blustery night. The comfort fills you up, satisfies your hunger, and helps you relax from a long day.


Here is the recipe of the soup pictured above. Enjoy!

Potato Corn Chowder

4 slices of bacon 2 medium potatoes diced

1 onion diced 3 cups of chicken or vegetable broth

2 garlic cloves minced 1/2 teaspoon Italian seasoning

2 cups of corn 1/4 teaspoon black pepper

1/2 cup coconut milk sliced green onions for topping


In stock pot, cook the bacon till crisp. Take out put on paper towel to drain,

Add onion and garlic to bacon drippings and cook until soften.

Add corn, potatoes, broth and seasonings. Bring to boil then turn down to low and simmer for 20 minutes until potatoes are soft.

Transfer half of the chowder to a blender and reincorporate back to stock pot.

Add coconut milk and simmer for 5 more minutes.

Garnish soup with bacon and onions.
